Bacon Wrapped Scallop Skewers
12 sea scallops
12 slices of bacon
¼ cup light olive oil
¼ cup lemon juice
¼ tsp of salt
¼ tsp of pepper
Vegetables of choice (optional)
- Combine olive oil, lemon juice, salt, and pepper – set aside
- Wrap scallops in bacon, and use a toothpick to pin the bacon to the scallops
- Add 2 scallops to each skewer with any vegetables in between
- Brush olive oil/lemon juice on skewers
- Grill for around 10 minutes
