Southwestern Potato Salad
3 pounds of medium red potatoes
½ cup of mayonnaise
2 tbsps of cholula or your preferred hot sauce
1 tbsp of lime juice
1 cup of cooked corn kernels
¼ cup of diced red onion
- Boil potatoes in salted water until tender (around 20 minutes)
- Allow potatoes to cool and then cut into 1-inch pieces
- In a large bowl combine mayonnaise, hot sauce, lime juice, corn kernels and red onion
- Add potatoes to the bowl and toss to evenly coat in the mixture
- Season with salt and pepper if desired
